Why grease in kitchen exhaust ducts is a fire problem, how it hides above a clean-looking canopy, and the warning signs operators should not ignore.
Grease buildup in ductwork is one of the most underestimated hazards in a commercial kitchen. The canopy can look presentable while the duct and fan carry a combustible coating thick enough to turn a cooktop fire into a roof involvement.
Understanding that gap—between what you see and what the exhaust path holds—is core literacy for anyone responsible for hoods.
Why duct grease is different
Grease that lands on a filter or canopy is at least partly visible during daily work. Grease that migrates into ducts:
- Collects out of sight between access points
- Can drip, pool, or cake depending on temperature and design
- Provides continuous fuel along the path fire wants to travel
Exhaust systems are designed to move heat and effluent out of the building. That same path can move fire if fuel is present.
How buildup accelerates
Common accelerators include:
- High frying and charbroiling volume
- Infrequent or shallow cleaning (canopy-only work)
- Missing or poorly maintained filters
- Reduced airflow that lets vapors linger and condense
- Long or complex duct runs with limited access
When airflow drops, kitchens sometimes notice smoke roll-out at the hood face. That is not only a comfort issue—it can signal a system already compromised by grease, filter neglect, or fan problems.
Warning signs operators can catch early
- Filters that load unusually fast after a known clean
- Grease streaking at duct joints or access panels
- Strong odor at the roof fan even when the kitchen is idle
- Visible grease at the fan housing or roof curb
- Recurring inspection findings focused on ducts, not just filters
- Higher kitchen temperatures or poor capture despite “the fan running”
Any of these should trigger a closer look—ideally with a documented inspection and photos—not another surface wipe.
Cleaning depth matters
A service that degreases only the visible hood interior may improve appearance without addressing duct fuel load. Ask vendors to document:
- Which sections were cleaned
- Which sections were inaccessible
- Condition of the fan and roof termination
- Recommended interval based on observed load
Pair that with cleaning frequency guidance and a structured inspection checklist.
Inspection’s role
Inspection turns “we think it’s fine” into evidence. Photo-backed findings on duct access points and fan condition are especially valuable because those areas are easy to skip in casual walkthroughs.
If reports repeatedly show duct grease shortly after cleaning, you do not have a paperwork problem—you have a scope or interval problem.
